Dates with Goats Cheese, Honey & Pistachio
These delicious salty-sweet canapes were part of a Thanksgiving story that I did, which was published in the Swedish Magazine, Matmagazinet. The sweetness of the dates contrast beautifully with the salty goats cheese. The chopped pistachios add textural balance. Best yet, they are super easy to prepare and can be made ahead. Servings: 20 bites
- 10 Dates cut lenghtwise in halves, pits removed
- 50 grams Soft goats cheese
- 50 grams creme fraîche
- 1 tsp honey
- 50 grams pistachio chopped
- Whip the cheese, crème fraîche and honey together and put it in a pipping bag. Choose whatever medium size nozzle available) Alternative is to use a small spoon, but that takes more time. Pipe some of the cheese mixture in each of the date halves and decorate with chopped pistachios. Voila!
If you are not a fan of goats cheese, you can subtitute that for a mild soft blue cheese. Or subtitute both creme fraiche and goats cheese for 100g mascarpone cheese with a few pinches of salt instead.
