Coconut, Ginger & Tumeric Porridge with Fresh berries
This delicious and healthy breakfast bowl gets it’s color kick from fresh tumeric, which along with the ginger, provide plenty of nutrient and anti-flamatory properties to help you jumpstart your day. Did I mention that it’s super yummy? The recipe is created as part of a commercial campaign for the Nordic webmarket, CDON, in cooperation with Bästa Kompisar Advertising Agencies, in Malmö.
Servings: 1 portion
- .5 dl Steel cut oats
- 1.5 dl coconut milk
- .5 dl water
- 1/2 tbsp freshly grated ginger
- 1/2 tsp freshly grated tumeric
- .5 to 1 Tbs honey to taste
A few pinches of salt and pepper to season, fresh berries, crushed sia seeds, nuts and coconut flakes for topping as desired.
- Mix the first 5 ingredients in a pot and cook for about 6-8 minutes or according to the package cooking instructions. Season with salt and pepper as desired. Serve in a bowl drizzled with honey and topped with your favorite seasonal berries. Throw in some crushed chia seeds, nuts and coconut chips as you wish. Enjoy!
