Garlic Parmesean Crushed Potatoes From Leftovers

Turn your leftover potatoes into delicious potato cakes.

This is so simple that it can hardly be called a recipe. As such I will just call it a delicious idea on how to use leftover cooked potatoes. There is no specific measurement as it is hard to determine how much leftover potatoes one would have hanging in the fridge. Use this as an inspiration and let your imagination guide you.

Parmesan garlic and herb crushed potatoes

Incredibly  simple and delicious way to use leftover boiled potatoes. Heck, you might want to cook some potatoes just to be able to make these cryispy little bites.

  • Leftover boiled potatoes
  • Melted butter
  • Freshly pressed/crushed garlic
  • Fresh Italian herbs such as thyme, rosemary, oregano
  • Grated parmesan cheese
  • Salt & Peppep to taste


  • Warm up the oven to 200c
    If your leftover cooked potatoes have been refrigerated, warm them a few seconds in the microwave to soften them a bit. 
    Flatten/crush  the potatoes using a fork, being careful to keep them together.
    Season with salt and pepper. (Remember paremsean is salty)
    Mix the melted butter with pressed garlic and herbs 
    Generally coat the potatoes with the garlic herb butter 
    Sprinkle some parmesan on top of the potatoes
    Bake the potates for about 25 minutes until golden and crispy
